[Ingredients]
500-600g baby back ribs, rub with salt and pepper
3 kaffir lime leaves
3-4 cardamom
2 star anise
1tsp fish sauce
1.5tsp gula melaka
350ml coconut milk
150g desiccated coconut, toasted
1tbsp oil
*Reserved lemongrass stems
[Spice Paste]
2 lemongrass, remove outer layers, *reserve upper stems
8-10 dried chilli, soaked
6 garlic cloves, peeled
6 shallots, peeled
3cm galangal, peeled
3cm ginger, peeled
2 cilantro roots
0.5tsp cumin seeds
3tbsp water
1tsp fish sauce
[Steps]
Blend spice paste ingredients till smooth.
In a pot, pan-sear ribs for a nice browning on the surface.
Using the same pot, over medium-low heat, add in oil, lemongrass stems, cardamom and star anise. Saute till fragrant.
Add in spice paste and saute for 3-4mins.
Add in coconut milk, gula melaka, lime leaves, fish sauce and coconut. Mix well and bring to a simmer.
Add in ribs and allow to simmer for 1.5-2hrs till meat is tender. Be careful of the liquid level, don’t let it burn!
When done, adjust seasoning if needed.
