Pork Belly with Pickled Greens

[Ingredients]

- 350g pork belly

- 6 slices of ginger

- 6 cloves of garlic, smashed

- 4 shallot, peeled and sliced

-150g-200g pickled mustard greens 酸菜, soaked in water for 1hr

- 2 red chilli, seeded and sliced

- 1 pickled plum

- 1 1/2tbsp rock sugar

- 1/2tsp salt


[Steps]

1. Simmer pork belly in 750ml water with 3 slices of ginger for 30-40mins.

2. Remove pork and slice it into strips. Reserve stock.

3. In another pot, add 1tbsp oil over medium-low heat. Add in ginger, shallot and garlic. Cook till fragrant.

4. Add in pork belly and mustard greens, cook for a few mins.

5. Add in 3/4 of the stock, followed by rock sugar and salt. Bring to a simmer and let simmer for 30mins.

6. Add in pickled plum and squish it.

7. Add in remaining stock and simmer for another 20mins till belly is tender. Skim off any fats on the surface if needed.

8. Adjust seasoning if needed.
