Pineapple Fried Rice


[Ingredients]

  • 1.5 cups rice, rinsed and cooked

  • 200g fresh pineapple chunks

  • 1/2 small yellow onion, peeled and chopped

  • 4 cloves garlic, peeled and chopped

  • 8 large prawns, peeled and deveined

  • 2 large eggs, beaten

  • 1 tomato, seeded and cubed

  • 1 red chilli, deseeded and chopped

  • Lime - to serve (optional)

[Seasoning]

  • 1tbsp tomato ketchup

  • 1 1/2tsp fish sauce

  • 1/2tsp white pepper

[Steps]

  1. In a heated wok with some oil, add in garlic and onion, stir fry till onions are soft.

  2. Add in prawns and cook for a few mins.

  3. Add in eggs, cook scrambled style till almost done. Then, add in rice and mix well.

  4. Add in remaining ingredients and mix well.
