[Ingredients]
1.5 cups rice, rinsed and cooked
200g fresh pineapple chunks
1/2 small yellow onion, peeled and chopped
4 cloves garlic, peeled and chopped
8 large prawns, peeled and deveined
2 large eggs, beaten
1 tomato, seeded and cubed
1 red chilli, deseeded and chopped
Lime - to serve (optional)
[Seasoning]
1tbsp tomato ketchup
1 1/2tsp fish sauce
1/2tsp white pepper
[Steps]
In a heated wok with some oil, add in garlic and onion, stir fry till onions are soft.
Add in prawns and cook for a few mins.
Add in eggs, cook scrambled style till almost done. Then, add in rice and mix well.
Add in remaining ingredients and mix well.
