Orange Chicken



Serving: 3-4pax


[Ingredients]

  • 4 large boneless chicken thigh - cut into pcs

  • 1/2 cup orange juice

  • 2 tbsp cooking cream

  • 1 egg white

  • 1 tbsp grated ginger

  • 1 tbsp grated garlic

  • 1 tbsp onion powder

  • 2 tbsp light soy sauce

  • 2 tbsp cooking oil + 2 tbsp minced garlic

  • Zest of 1/2 orange

  • 1 tbsp toasted sesame seeds


[Batter for Chicken]

  • 240g plain flour

  • 60g cornstarch

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 2 eggs

  • 200ml water


[Orange Sauce]

  • 1/2 cup orange juice

  • 1.5 tbsp white vinegar

  • 3 tbsp tomato ketchup

  • 1 tbsp light soy sauce

  • 1/2 tbsp chilli flakes

  • 1/2 cup rice syrup

  • 2 tbsp cooking oil


[Steps]

  1. In a heated pan, add in cooking oil and minced garlic. Stir-fry garlic till fragrant and it’s lightly brown and crispy. Separate fried garlic and garlic oil.

  2. Mix chicken pieces with orange juice, cream, egg white, grated ginger and garlic, onion powder, soy sauce and garlic oil. Let marinate chilled for at least 1-2hrs.

  3. In a mixing bowl, sift in flour, cornstarch, baking soda and salt. Mix well and divide the mixture into 2 portions.

  4. In one of the portion, mix in eggs and water.

  5. Coat chicken in wet mixture, followed by dry mixture. Deep-fry it in batches till golden brown. Let drain and set aside.

  6. In a pan, add in all of the sauce ingredients. Mix well and bring to a simmer till it thickens.

  7. Add in chicken and mix well. Followed by orange zest, fried garlic and sesame seeds.
