Miso XO Mushroom Pasta

[Ingredients]

  • 2 tbsp miso

  • 2 tbsp water

  • 3 tbsp XO sauce

  • 40g butter

  • 100g choice of mushroom

  • 170g spaghetti

  • Grated parmesan

  • Seaweed / nori strips


[Steps]

  1. Bring a pot of water to boil. Cook pasta according to packaging instruction.

  2. In a pan over medium-low heat, add in butter. When melted, add in mushrooms and cook it for 2-3mins.

  3. Add in miso, water and XO sauce, mix well.

  4. Add in pasta, a small ladle of pasta water and parmesan, mix well till sauce is smooth and creamy, and pasta is well coated.

  5. Serve garnish with nori strips.
