Mee Hoon Kueh



[Ingredients]

  • 300g minced meat - marinate with 1/2tsp salt, pepper, 1/2tsp cornstarch and 2tbsp water

  • 12 prawns

  • 200g choice of vegetable - e.g. xiao bai cai, nai bai, kailan, etc

  • 1 cup Chinese mushroom - soaked and sliced

  • 100g fried ikan billis

  • Fried shallots


[Mee Hoon Kueh]

  • 250g flour + extra

  • 1 egg

  • 1 egg yolk

  • 1/4tsp salt

  • 5-7tbsp water

  • 1tbsp oil


[Soup]

  • 3L boiling water

  • 150g ikan bilis

  • 100g soy beans - soaked for 2hrs

  • 10g rock sugar


[Chilli Sauce]

  • 50g chilli padi

  • 3 cloves garlic - peeled

  • 6tbsp rice vinegar

  • 3tsp sugar

  • 1/4tsp salt

  • 3tbsp fish sauce


[Steps]

  1. In a soup pot, add in soup ingredients. Bring to a boil, then let simmer for 45mins.

  2. In a large mixing bowl, add in flour and salt, mix well.

  3. Make a well in the center, add in eggs. Mix well using a fork.

  4. Add in oil and water, mix well and knead into a dough.

  5. Transfer dough to a floured worktop and continue to knead till a smooth dough forms.

  6. Place dough in a clean bowl. Cover and let rest for 20mins.

  7. Place chilli sauce ingredients in a blender, except fish sauce, and blend till smooth.

  8. Transfer to a small dish and mix in fish sauce. Set aside.

  9. When dough is ready, roll dough out. Fold it up and roll it out again. Repeat for a few times.

  10. Roll dough out into 2mm thickness and cut / tear (traditional method) into small pieces.

  11. In a saucepan, add 600ml of prepared soup, 1/4 cup of sliced mushrooms and 80g of minced meat. Break up the meat as you cook.

  12. Followed by 3 prawns and a serving of prepared mee hoon kueh. Bring to a boil and cook for 2mins.

  13. Add in some vegetables and cook for a min. Dish up and sprinkle fried ikan bilis and fried shallots over. Serve with prepared chilli sauce.
