Meatball Marinara

[Ingredients]

  • 150g minced chicken

  • 150g minced pork

  • 1 small yellow onion - peeled and chopped

  • 3 garlic cloves - peeled and chopped

  • 1 small carrot - peeled and diced

  • 1 tomato - chopped

  • 1 red chilli - chopped

  • 1 can unsalted whole tomatoes

  • 10-12 button mushrooms - halved

  • 1tbsp tomato ketchup

  • 1tsp sugar

  • Salt and pepper


[Marinade]

  • 1/2tsp salt

  • 1/2tsp pepper

  • 1tsp shallot oil


[Steps]

  1. Mix pork, chicken and marinade ingredients together. Roll them into balls.

  2. Season mushrooms with some salt and pepper. Saute them till browned, set aside.

  3. Saute onion, garlic, tomatoes, chilli and carrot till soft. Add canned tomatoes and smash it down as the mixture simmers. Let simmer for 10mins.

  4. You can skip this step if you want your sauce chunky. For a smooth sauce, blend it down with a handheld blender.

  5. Drop meatballs in and let simmer for 5-6mins, or till they are cooked through.

  6. Spoon over cooked pasta and topped with prepared mushrooms. Sprinkle some chopped herbs and/or parmesan cheese over as you like.
