Lemon Fish


[Ingredients]

  • 400g sea bass fillets, boneless, skinned and cut into serving pieces

  • 1/2tsp salt

  • 1/2tsp pepper

  • 1tsp sesame oil

  • 2 cloves garlic, peeled and chopped

  • 1 whole lemon: > i) 2tsp lemon zest using both ends of lemon > ii) 8 thinly sliced lemon from center part of lemon > iii) 2tbsp lemon juice from remaining parts of lemon

  • 1tbsp unsalted butter

  • 4tbsp flour


[Seasoning]

  • 2tsp sugar

  • 1/2tsp hondashi powder

  • 1/3tsp salt

  • 1/4tsp ground white pepper

  • Cornstarch solution - 1tsp cornstarch + 3-4tbsp water


[Steps]

  1. Season fish with salt, pepper and sesame oil.

  2. Preheat 200ml cooking oil in pan. Lightly coat fish with flour and pan fry till golden brown. Drain on paper towels.

  3. Remove oil from pan. Add garlic and butter, and cook over medium-low heat for a few mins.

  4. Add in lemon juice and seasoning ingredients. Mix well and allow liquid to thicken. Let simmer for 1min.

  5. Add in prepared fish and coat evenly in lemon sauce. Sprinkle lemon zest over and garnish with lemon slices.
