Lemon Cream Chicken



[Ingredients]

- 3-4 whole chicken leg, marinate with salt, pepper and extra virgin olive oil

- 1 yellow onion, peeled and sliced

- 5 cloves of garlic, peeled

- 3 shallots, peeled

- 1 sprig of parsley

- 1 zucchini, sliced

- 8-10 gem potatoes, par boiled then roasted / pan-fry slightly

- 1 carrot, sliced

- 1 cauliflower, cut into florets

- 2tsp lemon juice

- 1tbsp honey

- 3tbsp cooking cream

- 150ml stock / water

- Salt and pepper

- Cherry tomatoes, sliced


[Steps]

1. Pan sear chicken till brown.

2. Blend onion, garlic, shallot and parsley together till smooth - pesto.

3. Add 1tbsp olive oil in pot over medium-low heat. Add in pesto and cook till fragrant. Add some water if it's too dry.

4. Add in vegetables and simmer for 5-6mins.

5. Add in lemon, honey, cream, salt and pepper. Stir well, followed by chicken. Simmer for 10-12mins, or till vegetables are soft.

6. Garnish with tomatoes.
