[Ingredients]
1 large whole chicken - head and butt removed, split open at the back, rinsed and pat dry
1 zucchini - sliced
1 carrot - peeled and sliced
1 large russet potato - peeled and sliced
1 large sweet potato - peeled and sliced
Some cherry tomatoes - halved
3-4 calamansi - halved
[Marinade]
3tbsp laksa paste (🔍homemade laksa paste)
1tsp salt
1tsp pepper
1tbsp fish sauce
[Steps]
Mix marinade ingredients together and rub all over the chicken. Let marinate for 1hr.
Parboil potatoes till just cooked through. Drain and set aside.
Preheat oven 180degC.
Transfer chicken to a baking dish, together with the marinade. Arrange zucchini, carrot, potato and sweet potato slices around chicken. Roast for 40-45mins, till juices from the chicken run clear - no blood.
Remove from oven and sprinkle cherry tomatoes over. Squeeze calamansi over chicken for an extra punch!
