Korean Fried Chicken



[Ingredients]

  • 800g choice of chicken parts - thigh, drumstick, wings, etc

  • Salt and pepper

  • 1tbsp grated ginger

  • 1tbsp grated garlic

  • 2tbsp buttermilk

  • 8tbsp potato starch

  • 2tbsp cornstarch

  • 1tsp baking soda


[Sauce]

  • 1tbsp oil

  • 2tbsp minced garlic

  • 2 cups dried chilli - soaked and cut into small pieces

  • 1/4 cup light soy sauce

  • 1/2 cup rice syrup

  • 1tbsp honey mustard

  • 1tbsp white vinegar

  • 1tbsp brown sugar


[Steps]

  1. Place chicken, salt, pepper, ginger, garlic and buttermilk in a large mixing bowl and mix well. Let marinate covered for 30mins.

  2. Mix potato starch, cornstarch and baking powder together. Coat chicken evenly with dry mixture.

  3. Deep fry chicken for 3-4mins. Drain and set aside.

  4. Deep fry chicken again for another 3-4mins or until cooked. Drain and set aside.

  5. Prepare sauce. In a heated nonstick frying pan, add in oil. Followed by garlic, stir fry till fragrant.

  6. Add in dried chilli, stir fry till fragrant. Followed by soy sauce, syrup, mustard and vinegar. Mix well.

  7. Lastly, add in sugar and mix well. Bring to a boil.

  8. Add in chicken and mix well.

  9. Dish up and sprinkle some sesame seeds over (optional).
