Handmade Doughstick (Youtiao)



Serving: 8-10pcs


[Ingredients]

  • 1 tbsp (10g) baking powder

  • 0.5 tsp (3g) baking soda

  • 1 cup (237ml) cold fresh milk

  • 2.5 cups (350g) plain flour

  • 1.5 tsp salt

  • 1 tbsp vegetable oil


[Steps]

  1. In a small mixing bowl, add in baking powder, baking soda and milk, mix well.

  2. In a large mixing bowl, add in flour, salt and oil. Mix using a spatula and gradually mix in the milk mixture.

  3. Continue mixing till a dough is formed and knead it into a smooth dough for 10-12mins.

  4. Wrap it with plastic wrap and let rest for 30mins.

  5. Knead dough for 2-3mins and divide it into 2 portions. Roll each portion out to about thickness of 1/4-inch.

  6. Place the dough on a pastry board and drizzle some oil over the dough. Lightly coat both sides of the dough with oil. Cover it with plastic wrap and let rest for 2-3hrs.

  7. Flatten the dough slightly and cut them into 1-inch width strips. Stack 2 strips together and use a skewer to press down in the middle of the dough.

  8. Heat up a pot of oil. Give the dough a slight stretch and drop it into the hot oil. Using a pair of chopsticks, flip the dough consistently and deep-fry till golden brown.
