Hakka Yam Abacus Seed



[Ingredients]

- 260g yam, peeled, cut into smaller pcs and steamed

- 80g glutinous rice flour

- 60g tapioca starch

- 80-90ml boiling water

- 1/2tsp salt


[Meat Sauce]

- 200g minced meat, marinated with 1/2tsp light soy sauce, 1/2tsp sesame oil, 1/2tsp pepper

- 4 Chinese mushroom, soaked and sliced - reserve soaking liquid

- 50g dried squid, soaked and sliced

- 2tbsp dried shrimp, soaked and roughly chopped

- 1 cilantro root, chopped

- 3 cloves of garlic, peeled and chopped

- 1tbsp fish sauce

- 1/2tsp sweet dark soy sauce

- 4tbsp shallot oil


[Steps]

1. Knead steam yam with the ingredients till it forms a soft and slightly sticky dough.

2. Take about 1tsp of dough and roll into a roll, then make an indent in the center - abacus seeds.

3. Boil abacus seeds till they float. Remove from water and toss in shallot oil to prevent them from sticking.

4. In a pan, stir-fry garlic, mushroom, dried shrimp and squid till fragrant. Add in minced meat and stir-fry till just cooked through.

5. Add some mushroom soaking liquid if it's too dry, about 4tbsp.

6. Add in abacus seed, fish sauce, sweet sauce and 4tbsp shallot oil. Mix well.
