Frittata with Bacon

[Ingredients] - 8 large eggs
- 100ml milk
- 100ml heavy cream
- 4 bacon, diced
- 1 yellow onion, peeled and sliced
- 4 cloves of garlic, peeled and chopped
- 6-8 mini / 4 medium potatoes, peeled and cut into smaller pieces
- 6-8 cherry tomatoes, halved
- 150g broccoli, cut into florets
- 100g grated cheddar / gouda
[Steps] 1. Par-boil potatoes till just cooked thru. Drain and set aside.
2. Cook bacon till the fats rendered out. Set aside bacon.
3. Preheat oven to 180degC.
4. Using the same pan with the bacon oil, saute onion till soft.
5. Add in garlic and cook till fragrant.
6. Add in potatoes and saute for a few mins. Add in broccoli and season with salt and pepper.
7. Beat eggs with milk and cream, pour into the pan.
8. Sprinkle in bacon and tomatoes, followed by cheese. Place into the oven to cook for about 20mins till egg is cooked. An inserted skewer should come out dry.
9. Then increase to 200degC to cook for about 3mins till the cheese browns.
