Fish Soup with Pickled Mustard Greens


[Ingredients]

  • 150g cod fish, scaled and sliced (or other types of fish suitable for soup)

  • 100g minced meat

  • 1 tomato, wedged

  • 3 ginger slices

  • 1/2 leek, sliced

  • 1 chicken body bone, blanched

  • 2tbsp ikan bilis (in a small gauze bag)

  • 100g pickled mustard greens, sliced

  • 1 1/2 roll glass noodles, soaked

  • 2 bunches cai xin, trimmed


[Marinade]

  • 1tsp soy sauce

  • 1/2tsp pepper

  • 1/2tsp sesame oil

  • 1/2tsp cornstarch


[Seasoning]

  • 1tsp sugar

  • 1/2tsp salt


[Steps]

  1. Marinade: mix minced meat with cornstarch.

  2. Mix remaining ingredients together and add to minced meat and fish.

  3. In a small pot, add 500ml water, blanched chicken bone, ginger, leek and ikan bilis, let simmer for 30mins.

  4. Remove gauze bag, bones and leek. Add in minced meat. Followed by glass noodles, tomatoes, mustard greens and cai xin. Bring to a simmer and allow to cook 8-10mins over low heat.

  5. Lastly, add in seasoning and mix well.
