Dark Soy Sauce Pork with Potato



[Ingredients]

- 3 medium potatoes, peeled and sliced

- 200g pork tenderloin, sliced

- 3 ginger slices

- 3 cloves of garlic, peeled and minced

- Cornstarch solution: 1/3 cup water + 1 1/2tsp cornstarch


[Marinade]

- 1tsp ground pepper

- 1tsp light soy sauce

- 1tsp dark soy sauce

- 1/2tsp sesame oil

- 1tsp cornstarch


[Seasoning]

- 1tbsp dark sweet soy sauce

- 1/4tsp salt


[Steps]

1. Marinate pork with marinade ingredients. Let sit for 15mins.

2. On a non-stick frying pan, add in 1 1/2tsp cooking oil over medium-low heat. Add in potatoes and cook for 4-5mins till slightly soft.

3. Add in garlic and ginger, cook for a few mins, followed by pork. Cook for another few more mins.

4. Add in seasoning ingredients and cook for another few more mins.

5. Add in cornstarch solution and continue to cook till gravy thickens.
