Daikon and Pork Belly Stew


[Ingredients]

  • 500g daikon, peeled and cut into half-moon slices

  • 1 leek, trimmed and sliced

  • 1/2pkt shimeiji mushrooms, trimmed

  • 300g pork belly, sliced

  • 4 ginger slices

[Seasoning]

  • 2tbsp japanese cooking wine

  • 2tbsp mirin

  • 2tbsp light soy sauce

  • 1tbsp sugar


[Steps]

  1. Set a pot of water to boil. Blanch daikon and pork belly for 1-2mins. Drain and set aside.

  2. In a stewing pot, add in 1tbsp cooking oil over medium low heat. Add in ginger and stir fry till fragrant.

  3. Add in pork belly and stir fry till lightly browned.

  4. Add in daikon, 400ml water and seasoning ingredients. Mix well and bring to a simmer.

  5. Let simmer for 30-45mins till pork is fork tender. Add more water if needed.

  6. Add in mushrooms and leek, and cook for another 10mins.
