Crispy Battered Prawns


[Marinade] - 600g prawns, shelled, leave tails on

- 1tsp light soy sauce

- White pepper


[Batter] - 100g self raising flour

- 1tbsp rice flour

- 2tsp cooking oil

- 1/4tsp salt

- 120g water


- Plain flour, for coating


[Steps] 1. In a mixing bowl, add in prawns, soy sauce and pepper. Mix well and drain off excess liquid.

2. Mix all batter ingredients together, into a smooth batter.

3. Coat prawns with flour.

4. Heat oil for frying over medium heat. Holding the prawn’s tail, dip it into the batter and drop it into the hot oil. Fry over low heat till slightly golden, then increase to high heat and fry till golden brown.

5. Drain prawns on paper towels when cooked.
