Cream of Mushroom Soup


[Ingredients]

  • 20g Unsalted Butter

  • 300g Mushrooms - sliced

  • Salt and Black Pepper

  • 1/3 Yellow Onion - peeled and chopped

  • 3.5g Plain Flour

  • 120g Water

  • 80g Whipping Cream

  • Truffle Oil (optional)


[Steps]

  1. Melt butter in a saucepan over medium-high heat.

  2. Add in mushrooms and a pinch of salt, cook till mushrooms release its liquid. Reduce heat to low.

  3. Continue to cook, stirring, till the liquid evapourates and mushrooms are browned, about 15mins.

  4. Add in onions and cook till they are soft and translucent, about 5mins. Reserve a few slices of mushroom for garnishing.

  5. Add in flour, mix well, followed by water. Let simmer covered for 15-20mins.

  6. Blend soup till smooth, then mix in cream. Adjust seasoning.

  7. Serve soup garnished with reserved mushrooms. Drizzle some truffle oil over for an extra oomph!
