Chilli Prawns

[Ingredients]
16-20 large prawns, trimmed and deveined
250ml stock / water
1tbsp sugar
4tbsp tomato ketchup
1tsp fish sauce
Cornstarch solution - 1tbsp cornstarch + 2tbsp water
2 eggs, lightly beaten
[Rempah]
5 red chilli, deseeded
5 cloves garlic, peeled
5 shallots, peeled
2cm ginger, peeled
1tbsp (spicy) fermented bean paste
[Steps]
Blend rempah ingredients together into a smooth paste.
In a heated wok, add 1tbsp cooking oil over medium-low heat.
Add in rempah and stir fry till fragrant.
Add in prawns and cook for a few mins. Add in stock / water and bring to a simmer.
Add in sugar, ketchup and fish sauce. Mix well, followed by cornstarch solution and stir till liquid thickens.
Drizzle in eggs and give it a light stir.
Serve prawns with some fried mantou!
