Chicken Zucchini Pineapple Salad

[Ingredients]

  • 30g sesame seeds - alternative: sunflower seeds

  • 175g pineapple, cubed - alternative: pear

  • 150g cooked chicken breast, cubed

  • 1tbsp coconut oil (about 20g) - alternative: cold pressed canola oil

  • 1 zucchini, cubed (about 200g) - alternative: broccoli

  • 1tbsp lemon juice

  • 1tbsp chopped basil

  • Pinch of salt and black pepper


[Steps]

  1. Heat up a skillet on medium-low heat. Melt coconut oil and add in zucchini and pineapple. Sti-fry for 5mins.

  2. Transfer to a medium-sized bowl. Add in remaining ingredients and mix well.
