[Ingredients]
8 chicken drumsticks
Salt and pepper
3 russet potatoes, peeled and cut into pieces
1 cinnamon stick
3 cardamoms
1 star anise
4 kaffir lime leaves
2 pandan leaves, tied into a knot
250ml coconut milk
80-100g gula melaka
1tsp salt
300ml water
[Rempah]
8-10 shallots, peeled and sliced
5 cloves garlic, peeled and sliced
4cm ginger, peeled and sliced
2 chillies, deseeded and sliced
2tsp chilli powder
1.5tsp turmeric powder
3cm galangal, peeled and sliced
2 lemongrass, outer layers removed, sliced
4tbsp coconut oil
[Steps]
Add rempah ingredients into a blender and blend into a smooth paste.
Rinse and pat dry chicken. Season with salt and pepper.
In a large cooking pot, add 2tbsp cooking oil over medium heat. Followed by cinnamon, cardamoms and star anise, stir fry till fragrant.
Add in rempah and stir fry for a few mins.
Add in chicken and mix well. Cook for 5-8mins.
Add in potatoes, lime leaves, kaffir leaves, coconut milk and water. Mix well.
Lastly, add in gula melaka and salt. Mix well and let simmer till chicken is fork tender.
