Chicken Potato Stew



[Ingredients]

- 3 cloves of garlic, peeled and chopped

- 2cm ginger, peeled and chopped

- 6 shallots, peeled and chopped

- 6 drumlets and 6 mid-wing, washed and pat dry

- 3-4 potatoes, peeled and halved

- 1 medium onion, peeled and sliced

- 500ml stock / water


[Marinade]

- 1tsp light soy sauce

- 1/2tsp pepper

- 1tsp sesame oil


[Seasoning]

- 1 1/2tbsp oyster sauce

- 1 1/2tbsp light soy sauce

- 1/2tsp sugar


[Steps]

1. Pan-fry shallot till golden. Add in potatoes and pan-fry till slightly browned. Set aside.

2. Marinate chicken with marinade ingredients.

3. In a stew pot, add in 1tbsp oil over medium-low heat. Add in ginger, onion and garlic. Cook till fragrant.

4. Add in chicken and stir-fry for a few mins.

5. Add in stock / water, fried shallot and seasoning ingredients. Let simmer for 20mins.

6. Add in potatoes and let simmer for another 20mins, or till soft and liquid has reduced into a gravy.
