[Ingredients]
450-500g minced chicken
1tsp ginger puree
1tsp garlic puree
1tsp shallot puree
2-3tbsp shallot / sesame oil
6-8 prawns, peeled (reserve shells) and deveined, roughly chopped
1 stalk scallion, chopped
1tbsp light soy sauce
1tsp chicken powder
1tbsp cornstarch
[Others]
500-750ml water
500-750ml chicken stock
1 cilantro root
3 ginger slices
2tbsp shallot oil
Choice of other ingredients
[Steps]
Combine all ingredients, mix well and set aside for 30mins.
In a soup pot, add in shallot oil, followed by cilantro root and ginger. Stir fry till fragrant.
Add in water and reserved prawn shells. Let simmer for 30mins.
Remove shells. Add in stock and choice of other ingredients.
Shape meatballs and add into the pot. Let simmer for another 15-20mins till everything are cooked through.
