Chicken Char Siew



Servings: 2-3pax


[Ingredients]

  • 3 boneless chicken thigh

  • 2 tbsp light soy sauce

  • 2 tbsp rice wine

  • 1 tbsp cornstarch

  • 1 tbsp grated garlic

  • 1 tbsp grated ginger

  • 1 tbsp cooking cream

  • Salt


[Char Siew Sauce]

  • 2 tbsp light soy sauce

  • 2 tbsp oyster sauce

  • 1 tbsp grated garlic

  • 1.5 tbsp raw sugar

  • 2 tbsp cooking wine

  • 1 tbsp sesame oil

  • 2 tbsp honey


[Steps]

  1. Wash and pat dry chicken. Lightly score on the veins to prevent the chicken from shrinking during cooking.

  2. Mix chicken with the remaining ingredients, except for cream, and let marinate chilled for 2hrs.

  3. In a mixing bowl, combine char siew sauce ingredients, except for honey, together and set aside.

  4. Let chicken sit at room temperature for 0.5hr prior to cooking.

  5. In a heated pan, drizzle in some oil. Pan-fry chicken till golden brown and slightly charred. Add in sauce mixture and mix well.

  6. Let braise covered for a few mins or until the sauce thickens and dries up.

  7. Lastly, mix in the honey - gives the chicken a shiny glaze and a hint of sweetness.
