[Ingredients]
1kg pork collar - cut into large chunks
1 large yellow onion - peeled, sliced
4 garlic cloves - smashed
250ml stock
250ml water
1 1/2tbsp dark soy sauce
[Marinade]
2tbsp chopped ginger
2tbsp chopped garlic
2 coriander root - chopped
1 1/2tbsp sweet dark vinegar
30g gula melaka / brown sugar
1 1/2tbsp light soy sauce
1/2tsp five spice powder
1tsp pepper
[Steps]
Combine pork and marinade ingredients. Let marinate for 30mins.
In a stew pot of a pressure cooker, saute onion till slightly soft. Add in pork and saute for a min.
Add in dark soy sauce, stock and water. Pressure cook at 70 mode for 45mins. Continue to simmer it till the remaining liquid thickens.
