Caramelised Pork Collar


[Ingredients]

  • 1kg pork collar - cut into large chunks

  • 1 large yellow onion - peeled, sliced

  • 4 garlic cloves - smashed

  • 250ml stock

  • 250ml water

  • 1 1/2tbsp dark soy sauce


[Marinade]

  • 2tbsp chopped ginger

  • 2tbsp chopped garlic

  • 2 coriander root - chopped

  • 1 1/2tbsp sweet dark vinegar

  • 30g gula melaka / brown sugar

  • 1 1/2tbsp light soy sauce

  • 1/2tsp five spice powder

  • 1tsp pepper


[Steps]

  1. Combine pork and marinade ingredients. Let marinate for 30mins.

  2. In a stew pot of a pressure cooker, saute onion till slightly soft. Add in pork and saute for a min.

  3. Add in dark soy sauce, stock and water. Pressure cook at 70 mode for 45mins. Continue to simmer it till the remaining liquid thickens.
