Cantonese-style Steamed Cod



[Ingredients]

  • 2 slices of cod fish (500g)

  • Salt

  • 1tbsp Chinese wine + extra

  • 2tsp black vinegar

  • 3tbsp Kikkoman special fragrance soy sauce

  • 1tbsp rock sugar

  • 3 coriander roots

  • 1tsp chicken stock powder

  • 1 cup water


[Garnish]

  • 3-inch ginger - peeled, julienned

  • Some scallions - separate white and green parts, julienned

  • Some coriander leaves

  • Some red capsicum - julienned, soaked in cold water

  • 2tbsp hot cooking oil

[Steps]

  1. Season fish with some salt. Set aside for 10-20mins.

  2. Place remaining ingredients in a pot and let simmer for 15mins.

  3. Pat dry fish and coat it with some Chinese wine. Steam it for 8mins.

  4. Discard liquid in the dish. Pour some hot water over fish, then discard water.

  5. Place garnish - ginger and white parts of scallions on fish, pour the hot oil over.

  6. Then, add on the capsicum, green parts of scallions and coriander leaves.

  7. Remove coriander roots from the sauce and add sauce into the dish from the side.
