Butter Chicken



[Ingredients]

- 1 whole chicken (~1.2kg), cut into pcs, remove head, neck, feet and butt


[Optional]

- 3 potatoes, boiled and peeled

- 3 hard boiled eggs, peeled

- 1tbsp gula melaka


[Marinade]

- 250g full fat greek yogurt

- 2tsp cumin seed

- 2tbsp tomato ketchup

- 3 cloves of garlic, peeled

- 5-6 slices of ginger

- 1tbsp garam masala

- 1 stalk of coriander root*


[Sauce]

- 1 1/2tbsp butter

- 1 cinnamon stick

- 1 large yellow onion, peeled and chopped

- 3 cloves of garlic, peeled and chopped

- 2tbsp almond

- 3 red chilli, seeded and sliced

- 1 can 400g unsalted whole tomatoes

- 300ml cooking cream

- 1 stalk coriander leaves*


[Steps]

1. Blend all marinade ingredients together till smooth.

2. Season chicken pieces with salt and pepper. Pour marinade over and let marinate for 2-3hrs.

3. Grill chicken till just brown on the outside. Set aside and reserve marinade.

4. In a pot, add in butter and onions. Over low heat, cook till onions turn soft.

5. Add in almond, chilli, garlic, cinnamon and half the coriander leaves. Cook for 2-3mins.

6. Add in canned tomatoes and mash it. Bring to a simmer and cook for 4-5mins.

7. Remove cinnamon stick and blend the mixture till creamy.

8. Add in cream and reserved marinade. Bring to a simmer.

9. Add in chicken and simmer till chicken is fully cooked though and has absorb all the flavours.

10. Add in Gula Melaka, potatoes and eggs. Stir well.
