[Ingredients]
4 chicken drumsticks
4 chicken wings
1/2tsp salt
1/2tsp pepper
1tbsp sesame oil
2tsp cornstarch
2 ginger slices
3 cloves garlic, peeled and minced
1 large yellow onion, peeled and sliced
1 large or 2 medium tomatoes, sliced
[Seasoning]
2tbsp tomato ketchup
1tsp sugar
1tbsp shaoxing wine
200ml chicken stock
[Steps]
Season chicken with salt, pepper and sesame oil. Lightly coat them with cornstarch.
Pan sear chicken till golden brown, don’t have to cook through, set aside.
In a pot, add in 1tbsp cooking oil over medium low heat. Add in ginger, garlic and onion. Cook till onions are soft.
Add in chicken, followed by the remaining iningredients. Mix well and bring to a simmer.
Continue to cook till the liquid reduces into a gravy and chicken is tender.
