[Ingredients]
500g pork ribs, blanched
3 ginger slices
3 cloves garlic, peeled and smashed
3 shallots, peeled and sliced
1 cinnamon stick
1 star anise
500ml water / stock
200g sugarcane, peeled and cut into small pieces
3 medium potatoes, peeled and cut into 4’s
1 leek, soaked and cut into lengths
1 stalk scallion, sliced
[Seasoning]
2tbsp dark soy sauce
1.5tbsp balsamic vinegar
1tbsp light soy sauce
1tbsp rock sugar
1/2tsp ground white pepper
[Steps]
In a cooking pot, add in 1tbsp cooking oil over medium low heat. Followed by ginger, garlic, shallots, cinnamon and star anise. Stir fry till fragrant.
Add in prepared ribs and cook for a few mins. Followed by water / stock, sugarcane and seasoning ingredients. Mix well and bring to a boil. Let simmer for 40-45mins.
Remove sugarcane and add in potatoes. Continue to braise for another 10mins till potatoes are cooked through.
Add in leeks and cook for a few mins. Turn off fire, cover the pot and let rest for 5-6mins.
