Braised Ribs with Napa Cabbage



[Ingredients]

  • 500g pork soft bone ribs

  • 150g napa cabbage - cut into pcs

  • 1/2 carrot - cut into pcs

  • 1 coriander root - chopped

  • 3 garlic cloves - peeled and chopped

  • 3 ginger slices

  • 1/2 onion - peeled and sliced

  • 250ml bone stock

  • 100g cornstarch

  • 1 tsp baking powder


[Marinade]

  • 0.5 tsp salt

  • 0.5 tsp pepper

  • 1 tsp grated ginger

  • 1 tsp grated garlic

  • 1pc fermented beancurd (腐乳)


[Seasoning]

  • 1 tbsp oyster sauce

  • 1 tbsp light soy sauce

  • 2 tsp gula melaka


[Steps]

  1. Mix ribs with marinade ingredients and let marinate 30mins.

  2. Mix cornstarch and baking powder together. Lightly coat ribs and pan-fry till lightly browned on the outside.

  3. In a braising pot, stir-fry garlic, onion, coriander and ginger till fragrant.

  4. Add in carrot, cabbage and stock. Bring to a boil and let simmer covered for 10mins.

  5. Add in ribs and seasoning ingredients. Continue to simmer covered for another 30-35mins till ribs are soft.
