Braised Pork Belly with Yam


[Ingredients]

  • 300g pork belly

  • 2 ginger slices

  • 1 cilantro root


  • 300g yam - peeled and cut into chunks

  • 4 garlic cloves - peeled and chopped

  • 1 cinnamon stick

  • 1 star anise

  • 2 ginger slices

  • 5 shallots - peeled and sliced


[Marinade]

  • 1tbsp dark soy sauce

  • 1tsp bean paste (dou ban jiang)

  • 1tsp sesame oil

  • 1tsp white pepper


[Seasoning]

  • 1/2tsp salt

  • 1/2tsp sugar

[Steps]

  1. Simmer pork belly, ginger and cilantro root in water for 30mins. Drain and pat dry. Reserve stock.

  2. Combine boiled pork belly and marinade ingredients together. Let marinate for 30mins.

  3. Pan-fry yam till lightly browned on the outside, set aside.

  4. Fry shallots till golden brown, set aside. Reserve oil.

  5. In a stew pot, add in 2tbsp shallot oil over medium heat. Followed by cinnamon, star anise and ginger. Saute till fragrant.

  6. Add in garlic and pork belly, saute for 5mins.

  7. Add in yam, reserved stock and fried shallots. Mix well and bring to a simmer.

  8. Add in salt and sugar, stir well. Allow to simmer till liquid reduces into a gravy and meat is tender.
