Braised Herbal Chicken


[Ingredients]

  • 1/2 whole chicken, cut into smaller pieces

  • 1 leek, cut into lengths and soaked

  • 1 small pack black fungus, soaked and cut into smaller pieces

  • 2 cloves garlic, peeled and chopped

  • 3 ginger slices

  • 2 large dried scallops, soaked then break into smaller pieces


[Herbs]

  • 5-6pcs yuzhu

  • 3 red dates

  • 4 slices danggui

  • 6-8pcs dried longan

  • 1tbsp goji berries


[Marinade]

  • 1tsp salt

  • 1tsp white pepper

  • 1/2tbsp chopped ginger

  • 1/2tbsp chopped garlic

  • 1 1/2 cubes fermented beancurd (dou ru)


[Seasoning]

  • 1tbsp rock sugar

  • 1tbsp shaoxing wine

  • 2tsp dark soy sauce

  • 300-400ml stock


[Steps]

  1. Rinse and pat dry chicken pieces. Mix marinade ingredients together and rub onto chicken. Let marinate for 30mins.

  2. In a saucepan heated over medium-low heat, add in 1tbsp cooking oil. Add in garlic and ginger, and stir fry till fragrant.

  3. Add in chicken and cook till they are lightly browned.

  4. Add in seasoning ingredients and stock, followed by herbs, scallop and black fungus. Mix well and bring to a simmer. Let simmer covered for 30mins.

  5. Lastly, add in leeks and goji berries. Allow to cook for another 10mins.
