[Ingredients]
1 large chicken - rinsed, pat dry, cut into smaller pieces
2 large sea cucumber - sliced, blanched
5-6 large dried oysters
8 garlic cloves - peeled, chopped
8 shallots - peeled, chopped
4 ginger slices
8 shiitake mushrooms - soaked, reserve soaking liquid
200ml mushroom soaking liquid
200ml broth / water
[Marinade]
1 1/2tbsp Chinese wine
1tbsp light soy sauce
1tbsp sesame oil
1/2tsp pepper
1/2tsp salt
[Seasoning]
1tbsp light soy sauce
1tbsp oyster sauce
1/2tsp salt
1tsp sugar
[Steps]
Combine marinade ingredients with chicken. Let marinate 30mins.
Saute garlic, ginger, mushroom and shallots till fragrant.
Add in oysters and chicken and cook for 2mins.
Followed by sea cucumber and mushroom liquid. Top up with broth / water and bring to a simmer.
Add in seasoning ingredients and let simmer covered for 30mins, or till both chicken and sea cucumber are tender.
