Braised Chicken with Mushroom and Abalone


[Ingredients] - 10-12 drumlets and / or mid-wing

- 6 Chinese mushroom, soaked and sliced

- 4 cloves of garlic, peeled and chopped

- 4 shallots, peeled and chopped

- 4 ginger slices

- 2 cilantro root, chopped

- 1 canned abalone, simmered in water for 1.5hrs to tenderise - reserve canned abalone water


[Marinade] - 1tsp salt

- 1tsp pepper

- 1tsp sesame oil

- 1tbsp shaoxing wine


[Seasoning] - 1tbsp abalone sauce

- 1tbsp oyster sauce

- 1tsp sugar

- 1tbsp dark soy sauce


[Steps] 1. Rinse chicken and pat dry. Add in marinade ingredients and let marinate for 30mins.

2. In a claypot, saute garlic, shallot, ginger and cilantro root till fragrant.

3. Add in mushroom and cook for 2mins.

4. Add in chicken and cook for 2-3mins. Add in seasoning and mix well.

5. Add in abalone water and bring to a simmer. Simmer till liquid thickens.

6. Meanwhile, slice abalone into slices. Add into the claypot and cook for another 4-5mins on low heat.
