Braised Chicken with Chestnuts



[Ingredients]

  • 8pcs chicken mid-joint / drumlet / mixed

  • 2tsp chopped garlic

  • 1tbsp cooking oil

  • 1 carrot - peeled, cut into chunks

  • 60g chestnuts

  • Water

[Seasoning]

  • 2tbsp oyster sauce

  • 1tbsp light soy sauce

  • 1tbsp dark soy sauce

  • 2tsp sugar

  • Pinch of pepper

[Steps]

  1. Using a fork / skewer, poke some holes all over the chicken.

  2. Heat oil in a pot and stir-fry garlic till fragrant.

  3. Add in chicken and stir-fry till it is slightly browned.

  4. Add in carrot and enough water to cover the chicken completely.

  5. Add in seasoning ingredients and mix well. Add in chestnuts and bring the mixture to a boil.

  6. Reduce heat to low and let simmer covered for 30-40mins. Flip the chicken occasionally to ensure even browning. Adjust seasoning if needed.

  7. When the sauce has reduced by half, turn off heat. Let chicken sit covered for 15mins.

  8. Turn on heat again and allow it to come to a boil again.
