[Ingredients]
1kg beef short ribs - fats trimmed, cut into chunks
1 large onion - peeled and sliced
500ml beef stock
4 garlic cloves - peeled and chopped
2tbsp dark soy sauce
[Marinade]
2tbsp chopped ginger
2tbsp chopped garlic
2 cilantro root - chopped
2tbsp worcestershire sauce
2tbsp sweet dark vinegar
1tbsp light soy sauce
30g gula melaka - finely chopped
1tsp ground black pepper
[Steps]
Combine marinade ingredients and beef together. Let marinate for 30mins.
In a pot of the pressure cooker, saute onions till slightly soften. Add in beef and let cook for 1min.
Add in remaining ingredients, mix well and pressure cook at pressure 70 for 60mins, or till liquid has reduced and thickened, and beef is tender.
