[Ingredients]
1 tbsp olive oil
3 stalks celery - peeled and diced
2 carrots - peeled and diced
2 onions - peeled and diced
200g pancetta / bacon - sliced
600g minced beef
400g minced pork
200ml dry red wine
4 tbsp tomato paste
600ml chicken stock
2 bay leaves
Salt and pepper
Pappardelle (pasta)
[Steps]
In a casserole pot, add in olive oil and pancetta / bacon, cook till lightly browned and fat is rendered.
Add in celery, carrots and onions, saute till onions are translucent.
Add in minced beef and pork, season with salt and pepper. Mix well and cook till meats are cooked.
Add in tomato paste and continue to cook till moisture in the pot has mostly evapourated.
Add in wine and continue to cook till alcohol has evapourated.
Add in chicken stock and bay leaves, and bring to a boil. Preheat oven 150degC.
Place pot into the oven for 2-3hrs.
Prepare pasta and ladle sauce over.
