[Ingredients]
1.2-1.4kg pork trotters - chop into pieces
1/2tsp salt
1tbsp sesame oil
150g bentong ginger - peeled, cut into pieces, smashed
1 garlic bulb - peeled, smashed
1 coriander root
250ml CKT black sweet rice vinegar
400ml broth / water
40-50g gula melaka
5 hardboiled eggs
[Steps]
Blanch trotters and let it simmer for 8-10mins. Drain and rinse it. Add in salt and mix well.
In a stew pot, add in sesame oil over medium-low heat. Followed by ginger, coriander root and garlic, stir-fry till fragrant.
Add in trotters and toss well.
Add in vinegar, broth / water and gula melaka and mix well. Allow to simmer covered for 1.5hrs. Add more water if required.
