Black Vinegar Trotters


[Ingredients]

  • 1.2-1.4kg pork trotters - chop into pieces

  • 1/2tsp salt

  • 1tbsp sesame oil

  • 150g bentong ginger - peeled, cut into pieces, smashed

  • 1 garlic bulb - peeled, smashed

  • 1 coriander root

  • 250ml CKT black sweet rice vinegar

  • 400ml broth / water

  • 40-50g gula melaka

  • 5 hardboiled eggs

[Steps]

  1. Blanch trotters and let it simmer for 8-10mins. Drain and rinse it. Add in salt and mix well.

  2. In a stew pot, add in sesame oil over medium-low heat. Followed by ginger, coriander root and garlic, stir-fry till fragrant.

  3. Add in trotters and toss well.

  4. Add in vinegar, broth / water and gula melaka and mix well. Allow to simmer covered for 1.5hrs. Add more water if required.
