Black Fungus Chicken in Sweet Sauce



[Ingredients]

- 200g chicken thigh, cut into serving size

- 1 small pkt black fungus, soaked and cut into serving size

- 4-5 slices of ginger, julienned

- 3 cloves of garlic, peeled and chopped


[Marinade]

- 1tsp light soy sauce

- 1tsp dark soy sauce

- 1tsp sesame oil

- 1tbsp shoaxing wine

- 1tsp pepper

- 150ml stock / water


[Seasoning]

- 1tbsp dark soy sauce

- 1tbsp sweet dark sauce

- 1/2tsp chicken powder


[Steps]

1. Mix chicken and marinade ingredients together. Let sit for 20mins.

2. In a pan, add 1tsp cooking oil and 1tsp sesame oil over medium-low heat. Add ginger and garlic and stir-fry till fragrant.

3. Add in chicken and 2tbsp water, stir-fry for a few mins.

4. Add in black fungus and stir-fry for a few mins.

5. Add in stock / water, cover and let simmer till liquid thickens into a gravy, and chicken is cooked through.
