[Ingredients]
400g beef sirlon - sliced into thin strips
1 large yellow onion - peeled and sliced
4tbsp salted butter
200g brown button mushrooms - sliced
250ml beef stock
150g sour cream
2 slices Gouda cheese (about 30g)
Salt and pepper
Olive oil
[Steps]
Season beef with salt and pepper.
Add some olive oil into a pan over medium heat. Add in beef and cook till a nice brown colouring is achieved. Set aside.
Reduce pan to low heat. Add in butter and onions. Scrape down the brown bits as the onions cooks down.
Add in beef stock and bring to a simmer. Followed by sour cream and mix well.
Add in beef and mix well.
Lastly, add in cheese and adjust seasoning. Serve over pasta, mashed potato or cauliflower.
