[Ingredients] - 100g barramundi belly
- 3/4tbsp minced garlic
- 2tbsp olive oil
- Some sea salt
- 2tbsp butter
- 1tbsp lemon juice
- 2tbsp water
- 1/2tsp sugar
[Optional] - Chopped parsley
- Chilli flakes
- Blanched asparagus
[Steps] 1. Pat fish dry and lightly season with sea salt.
2. Spread olive oil all over fish, set aside.
3. Add butter to pan and stir-fry garlic.
4. Add lemon juice, water and sugar, stir well. When sauce starts to sizzle, turn off heat and set aside.
4. On another pan, pan-fry fish till lightly browned around the sides. Place fish on serving dish (or on a bed of asparagus as picture) and pour sauce over.
5. Garnish with parsley and chilli flakes.
