[Ingredients]
250g white clams, cleaned
6-8 large prawns, peeled and deveined
3-4 tilapia fillets (or other fish like seabass or salmon)
2 medium squid, cleaned and cut into smaller pieces
4-5 sprigs fresh thyme
1/2 white onion, peeled and sliced
2tbsp fresh lemon juice
1/2 cup white wine / craft beer
Olive oil
Salt and pepper
[Steps]
Preheat oven 180degC.
Marinate fish with salt and pepper, and drizzle olive oil over. Set aside.
In a baking dish, add in clams, prawns and squid. Followed by wine / beer, lemon juice, salt and pepper. Mix well.
Pull thyme leaves and add in. Give a nice toss and drizzle some olive oil over.
Bake for 15-18mins. It is ready when the clams start to open - they take the longest to cook.
