Baked Seafood Platter


[Ingredients]

  • 250g white clams, cleaned

  • 6-8 large prawns, peeled and deveined

  • 3-4 tilapia fillets (or other fish like seabass or salmon)

  • 2 medium squid, cleaned and cut into smaller pieces

  • 4-5 sprigs fresh thyme

  • 1/2 white onion, peeled and sliced

  • 2tbsp fresh lemon juice

  • 1/2 cup white wine / craft beer

  • Olive oil

  • Salt and pepper


[Steps]

  1. Preheat oven 180degC.

  2. Marinate fish with salt and pepper, and drizzle olive oil over. Set aside.

  3. In a baking dish, add in clams, prawns and squid. Followed by wine / beer, lemon juice, salt and pepper. Mix well.

  4. Pull thyme leaves and add in. Give a nice toss and drizzle some olive oil over.

  5. Bake for 15-18mins. It is ready when the clams start to open - they take the longest to cook.
