Baked Paper-wrapped Fish


[Ingredients]

  • 1 salmon fillet

  • 1 potato - peeled, sliced

  • 1 leek - sliced, separate green and white parts

  • Salt and pepper

  • 1 garlic clove - peeled, chopped

  • 2 shallots - peeled, sliced

  • 3-4 lemon slices

  • A few cherry tomatoes - halved

  • 3-4tbsp lemon juice

  • Some extra virgin olive oil

  • Few sprigs of dill


[Steps]

  1. Prepare 2 sheets of large baking paper, enough to wrap the fish. Place 1 sheet on the baking tray.

  2. Lay potato slices and white parts of leek on tray, then place the salmon over. Season salmon with salt and pepper.

  3. Sprinkle garlic and shallot over, then lay lemon slices on top.

  4. Sprinkle green parts of leek over. Place dill on lemon, and lastly the tomatoes around the fish.

  5. Drizzle some olive oil over. Place the other sheet of baking paper over, fold and seal the edges.

  6. Bake at 200degC for 20-25mins.

  7. Snip some slits first to allow the steam to escape. Then open up the parcel and it’s ready to be served.
