Baked Eggs in Bolognese

[Ingredients]

  • 3 whole eggs (about 150g)

  • 30g mixed greens - alternative: arugula / rocket

  • 175ml tomato puree

  • 1tbsp coconut oil (about 20g) - alternative: cold pressed canola oil

  • 125g ground beef

  • 1.5tsp dried parsley

  • Pinch of chilli flakes

  • 1 garlic clove, chopped (about 5g)


[Steps]

  1. Preheat oven to 175degC.

  2. In a large cast iron pan (if you do not have, skip using the oven. In step 7, continue to cook in pan till everything is cooked through.), heat oil over medium heat.

  3. Add beef and cook for 5mins till browned.

  4. Add in tomato and cook for another 5mins.

  5. Add in remaining ingredients, stir well and cook for another 3mins.

  6. Using a spoon, make 3 shallow holes in the mixture. Crack an egg into each hole.

  7. Allow to bake till eggs are cooked to your liking (about 10mins).

  8. Serve eggs with salad.
