[Ingredients]
2 whole chicken legs / 4 wings + 2 drumsticks - rinsed
8 shallots - peeled
5 garlic cloves - peeled
5tbsp cooking oil
3 potatoes - peeled, cut into chunks
2tbsp fermented bean paste
250ml water
2tbsp dark soy sauce
2tbsp gula melaka / brown sugar
1tsp light soy sauce
[Steps]
Blend shallots and garlic with 3tbsp of oil till smooth.
Pan-fry potatoes till browned, don’t need to cook through, set aside.
In a cooking pot, add 2tbsp of oil and shallot-garlic blend. Stir-fry over medium-low heat till fragrant.
Add in bean paste, dark and light soy sauce and gula melaka / sugar. Mix well.
Followed by chicken and potatoes, mix well.
Add in water and bring to a simmer. Let cook till liquid reduces to a gravy, about 20-25mins.
