[Ingredients] - 1pc barramundi fish
- 2 calamansi
- 1 lemongrass, bruised and cut into sections
- 1 chilli padi, diced
- 75g BBQ paste (Batu Lesung Spice Company Panggang BBQ Marinade)
- Some salt
- 1pc banana leaf
- 1pc aluminium foil
- Some toothpicks
[Steps] 1. Heat up some water and soak banana leaf for awhile. Drain leaf and pat dry.
2. Rub some salt on fish. Place fish on leaf.
3. Squeeze calamansi juice onto fish. Sprinkle lemongrass and chilli slices over fish.
4. Add BBQ paste onto fish and spread out evenly.
5. Fold leaf to encase fish. Secure ends with toothpicks. Then wrap the banana leaf-wrapped-fish in foil. Chill for at least 30mins.
6. Place fish into air fryer basket and air-grill at 180degC for 15-20mins, or until cooked.
