Air Fried BBQ Wings

[Ingredients]

  • 8 chicken wings - cleaned and pat dry

  • 5 calamansi - halved

  • 2 tbsp minced shallot

  • 3 tbsp minced garlic

  • 2 tbsp minced ginger

  • 2 tbsp oyster sauce

  • 2 tsp fish sauce

  • 2 tbsp honey

  • 1 tbsp light soy sauce

  • 0.5 tsp salt

  • 0.5 tsp pepper

  • 1 tbsp sesame oil


[Chilli Dip]

  • 6 red chillies

  • 5 chilli padi

  • 20g ginger - peeled

  • 5 garlic cloves - peeled

  • 1 tbsp rice vinegar

  • Juice of 6 calamansi

  • 3 tbsp sugar

  • 1.5 tsp salt

  • 60ml chicken stock


[Steps]

  1. Separate wings into mid-wings and drumettes.

  2. Mix all ingredients, except for calamansi, together and pour over the chicken. Mix well and let marinated chilled for 1hr or overnight.

  3. Blend chilli dip ingredients together till well incorporated.

  4. Allow wings to sit at room temperature for 1hr before cooking. Add wings to airfryer basket and airfry it at 200degC for 5mins on each side, till crisp and golden brown.

  5. Serve wings with chilli dip and calamansi.
