Stir-fry Eggs with Tomatoes 番茄炒蛋


[Ingredients]

  • 2 tomatoes, cut into smaller pieces

  • 5 eggs

  • 1/2tsp salt

  • 1/8tsp pepper

  • 3tbsp tomato ketchup

  • 2tsp sugar

  • 50ml water

  • 1tsp cornstarch + 2tbsp water

  • 2 stalks scallions, chopped

  • 4tbsp oil

[Steps]

  1. In a bowl, crack eggs in and add salt and pepper. Mix well.

  2. In a heated pan with 2tbsp of oil, add in half the scallions, tomatoes, and stir-fry for 1min.

  3. Followed by ketchup, sugar and water, stir well.

  4. Add in cornstarch solution, stirring and cook till sauce thickens. Set aside.

  5. Clean pan, and heat pan with 2tbsp of oil. Add in eggs and cook scrambled style.

  6. When eggs are half cooked, add in tomato mixture and remaining scallions. Mix well.
