Pork and Chive Dumplings 猪肉韭菜饺子


[Ingredients]

  • 40pc dumpling wrapper - round, white

[Filling]

  • 500g minced pork

  • 150g minced pork fat

  • 3tbsp light soy sauce

  • 1/2tsp sugar

  • 1/2tsp salt

  • 2tbsp Shao Xing Jiu

  • 1tbsp grated ginger

  • 100ml water

  • 1tbsp sesame oil

  • 30g scallions, chopped

  • 150g Chinese chives, chopped

[Steps]

  1. Add all filling ingredients, except for sesame oil, scallions and chives. Mix well in one direction, then scoop it up and throw back into the bowl at a height for a few types to create texture.

  2. Add in remaining ingredients and mix well.

  3. Spoon 1.5tsp of filling into the center of a wrapper. Brush water (act as adhesive) around the edge of the wrapper. Fold the wrapper over the filling forming a semi circle, seal the edges together.

  4. Boil dumplings till they start to float to the surface.
