[Ingredients]
40pc dumpling wrapper - round, white
[Filling]
500g minced pork
150g minced pork fat
3tbsp light soy sauce
1/2tsp sugar
1/2tsp salt
2tbsp Shao Xing Jiu
1tbsp grated ginger
100ml water
1tbsp sesame oil
30g scallions, chopped
150g Chinese chives, chopped
[Steps]
Add all filling ingredients, except for sesame oil, scallions and chives. Mix well in one direction, then scoop it up and throw back into the bowl at a height for a few types to create texture.
Add in remaining ingredients and mix well.
Spoon 1.5tsp of filling into the center of a wrapper. Brush water (act as adhesive) around the edge of the wrapper. Fold the wrapper over the filling forming a semi circle, seal the edges together.
Boil dumplings till they start to float to the surface.
